Several Shopify defaults assume services Peru doesn't get. Here's the order a careful expert works through them.
First, the payment provider. Because Shopify Payments isn't offered to Peruvian stores, an outside payment provider has to take every payment, and the store runs in Peruvian soles (PEN). An expert should confirm the provider supports soles, list the payment methods it adds to checkout, and help with the application, since nothing else can launch until it's approved.
Then tax. On Shopify, Peru is Manual Tax territory: the Shopify Tax and Basic Tax options simply don't exist for Peruvian stores. You decide the rates, and the store charges exactly what's entered, with nothing updating itself. A good expert asks for the rates in writing, from you or your accountant, before typing anything in. Third-party tax apps are allowed if you'd rather automate.
Then in-person selling, if you need it. Card readers and other POS kit have to be bought from third-party retailers in Peru's case, since Shopify's hardware store doesn't send orders there. Have your expert check each item against Shopify's supported hardware before you order, because unsupported kit is a refund request, not a set-up task.
Finally, language. The admin and the checkout both run in Spanish. Your team can work in Spanish day to day, and Peruvian shoppers get a Spanish checkout. Ask the expert to translate anything custom, from shipping notes to order emails, rather than leaving it in English.
